I’ve had this Coconut Bread on repeat lately.
A dear friend shared the recipe with me and it originally came from Mindfood. It’s one of those lovely, no-fuss bakes that never seems to disappoint.
It’s so simple. Just a bowl, a spoon and into the oven. The kind of recipe you can almost make without thinking.
I’ve reduced the sugar slightly in mine over time, and it still works beautifully. Fresh from the oven it’s hard to resist adding lashings of butter… but if I’m honest, I love it plain. Still warm, sliced thick, with a cup of tea nearby.
Nothing fancy. Just good, comforting baking.

Coconut Bread
Ingredients
- 1½ cups self-raising flour
- 1½ cups desiccated coconut
- 1½ cups milk
- ¾ cup sugar (I use a little less)
Method
- Add everything to a bowl and mix until combined.
- Pour into a lined loaf tin and bake at 180°C for about 45 minutes, or until golden and cooked through.
- Serve warm or cold.
