I've been making these banana muffins for breakfast and a few of you have asked me for the recipe, so I thought I'd share it here.
It's one of those recipes where you just throw everything together. Nothing fancy, but they're delicious for breakfast or a little snack during the day.
I like to add a little honey and sprinkle chia seeds on top, but you can make them however you like. 🤎
Ingredients
Makes 6 muffins
-
3 ripe bananas, mashed
-
1 cup rolled oats
-
1 cup Greek yoghurt
-
1 egg
-
Cinnamon, to taste
-
Honey, to taste
-
Chia seeds for topping, or whatever you prefer
Method
-
Preheat your oven to 180°C.
-
Mash the bananas in a bowl.
-
Add the rolled oats, Greek yoghurt, egg, cinnamon and honey.
-
Mix everything together until combined.
-
Divide the mixture between six muffin cups and sprinkle with chia seeds, if using.
-
Bake for approximately 20 minutes, until firm and golden.
Enjoy!
