This has become one of my favourite winter morning rituals.
On a cold morning, there's something so comforting about a pot of creamy stovetop oats gently simmering away on the stove while the kettle boils.
I love topping mine with stewed apple, dried figs, prunes, a generous dollop of Greek yoghurt and, of course, a drizzle of honey. Sometimes I'll sprinkle over a few seeds as well, just because they make it look so pretty.
It's simple, nourishing and one of those breakfasts that warms you from the inside out.
Nothing fancy. Just good food to start the day.

Belinda's Favourite Winter Stovetop Oats
Ingredients (Serves 2)
- 2 cups rolled oats
- 3 cups milk
- Pinch of salt
To serve
- Stewed apple
- Dried figs, sliced
- Prunes, sliced
- Greek yoghurt
- Seed mix (optional)
- Honey
Method
Add the rolled oats, milk and a pinch of salt to a saucepan.
Cook over a medium heat, stirring continuously until the oats are creamy, about 5 minutes.
Spoon into bowls and top with stewed apple, sliced dried figs and prunes, a generous dollop of Greek yoghurt and a sprinkle of seed mix if you like.
Finish with a drizzle of honey and enjoy while it's still warm.
