Here is Molly's delicious homemade gnocchi recipe. Serve with sauce of your choice, Molly's favourite is burnt butter & sage.
Gnocchi Recipe
For the Gnocchi, use 100g of flour and 1 egg yolk per 500g of potato. (For four servings, Molly used 1kg potato, 400g flour, and 2 egg yolks).
Method
1. Boil the potatoes in salted water until soft.
2. Drain the potatoes and place them on paper towels. Let them cool in the freezer until cold.
3. Mix all the ingredients to form a dough.
4. Flour the work surface lightly and knead the dough gently (the dough should not be overworked).
5. Divide the dough into 4 equal pieces.
6. Roll each piece into a log and cut into small pillows.
7. Transfer the gnocchi to a pan dusted with flour to prevent sticking.

To Cook
Place the gnocchi in a pot of salted boiling water. As they rise to the surface, transfer them into a saucepan with the sauce of your choice!
