Ingredients
Sweet potato
Olive oil
Paprika
Mince
Capsicum
Kidney beans
Taco seasoning
Cheese
Avocado
Sour cream
Coriander
Method
1. Preheat your oven to 180°C. Bake the sweet potatoes for about 1 hour, or until they’re soft, golden, and caramelised.
2. While the sweet potatoes are baking, cook the mince in a fry pan. Add the capsicum, kidney beans, and taco seasoning. Season with salt and pepper to taste.
3. Once the sweet potatoes are done, make a small split down the middle of each one. Spoon the mince mixture inside.
4. Top with cheese, then return to the oven until the cheese is melted and golden.
5. Finish with avocado, a dollop of sour cream, and a sprinkle of coriander.
