Some of our favourite maker connections have come about in the most unexpected ways — and Chapo’s Raw Honey is one of them.
Melinda and Norm first reached out about stocking their beautiful raw honey, and from the moment I heard their story (and tasted the honey), I knew it was a perfect fit for Tomolly. I’ve always been a honey lover, and the way they care for their bees and the land felt so aligned with what we value here.
Especially thoughtful — they even offered to create a black and white label just to suit the Tomolly aesthetic.
We’ve had the joy of stocking their jars for some time now, and I’m so excited to share their story with you here on the journal.
A Journey Rooted in Nature
In 2008, we traded city life in Sydney for the open landscapes of Young. With deep country roots—Norm from Narooma and myself from Gunning—the move felt right. It offered our children the gift of growing up in nature.
Then life took a turn, it was the perfect moment to lean into our side passion—beekeeping. With Norm’s steady nature and adventurous spirit, we embraced the challenge, transforming a simple love for bees into a thriving business.
The Story of Chapo’s Raw Honey
Our journey began with three hives and an unexpected lesson in nature. After planting an orchard, we eagerly awaited fruit, but the trees remained bare. Then, as if by fate, Norm encountered a swarm of bees—and everything changed.
What started as sharing honey with friends soon became something bigger. Encouraged by a dear friend’s praise, we took a leap of faith. Today, we manage around 400 hives, providing both pollination services and premium-quality raw honey.
With my background in food science and the mentorship of a seasoned sixth-generation beekeeper, we’ve refined our craft. And perhaps it was always meant to be—after all, my name, “Melinda,” means “honey.” (Corny, I know)

Tomolly embodies everything we cherish—thoughtful craftsmanship, slow living, and heartfelt connection. Nestled in Carcoar, the “town time forgot”, Tomolly is a haven where beauty, passion, and tradition come together. The warm welcome of Belinda, also known as “The shopkeeper”, makes every visit a reminder of life’s simple joys.

The Essence of Raw Honey
Raw honey is more than just a sweetener—it’s a celebration of nature’s finest work. We never heat our honey above 45°C, preserving its full nutritional value, flavour, and natural benefits. Unlike some producers, we don’t use antibiotics on our bees, ensuring a pure product.
Each jar carries the unique character of the season, shaped by Australia’s diverse eucalyptus blooms and ever-changing climate. Much like fine wine, honey reflects its terroir, offering a distinct taste experience every time.
Our Honey Varieties at Tomolly
Bees Own Blend – A balanced mix of eucalyptus and ground flora, loved by those who find relief from hay fever. With classic, nostalgic flavours and tones, and a great “allrounder" it’s perfect for toast, tea, baking, crumpets, porridge, granola, or even mead-making.
Acorn Mallee (Eucalyptus Oleosa) – A rich, smooth honey with butterscotch tones and a subtle smoked finish. Exquisite on sourdough, paired with cheese, or enjoyed by connoisseurs.
Red Stringybark (Eucalyptus Macroryncha) – Caramel-like tones with the lowest GI of tested honeys (lower than maple syrup). A delicious dream with yogurt, berries and ground almonds, chai, chocolate or coffee. It also has good antibacterial properties.
Every jar is traceable, with a batch number detailing its origin, bottling date, and unique journey from hive to home.
